I remember reading that the only reason baking mixes (pancake, cake, cookies, brownies) have expiration dates on them is because the leavening will become ineffective after so long. This is definitely an important reminder to me of that.

I was in rural king today and talked to the store manager for about 5 minutes. He says they are having serious problems getting merchandise. Sold out items take months to get back in , if at all ,and the reason that there are items on the shelves is because they are the items that don’t sell or are slow sellers. So, if a high demand item comes in, it goes out the same day. And what is on the shelves is the stuff that don’t sell good!
Hey there Rudy. As time goes by the leavening agents in baking mixes do become ineffective. This meaning baking soda and or baking powder. But your so right its still good,all you do is add back the leaving agents and its just fine. I know because that's what I do with old mixes here. Take care and God Bless.

Hi, Last month I had a long term can of Thrive Life baking soda that was 2 years old blow the whole end of the can out. It was sitting on a top shelf in my long term food pantry laying down on it's side. When the can blew up it propelled the can across the room and bounced off the wall then hit me in the head. My whole pantry was covered in baking soda as was my 3 chihuahuas. When i sweep it up I tried to see if it was still active in warm water it was.

I had a lot of the old pouch cornbread mixes that were way "past date". I added some baking powder to them and cooked them and they turned out just fine. They were a bit "crumbly", but tasted just fine. No need to throw something like that out. Still have some and continue to use them. Still kicking and breathing here :)
Baking SODA doesn't go bad, but Baking POWDER will break down. It was recommended by a few channels to store Baking Soda and Cream of Tartar, separately, to mix as needed to make baking powder.
The truth is that you have to sometimes try your preps out to make sure that you are doing properly and it is appetizing. Food is necessary for life, but good food makes life better!
We celebrated my mother's 92nd birthday yesterday with a good homecooked meal from my canned goods!! We had pinto beans, stewed potatoes, fried okra, and pork loin along with mama's homemade cornbread..and for dessert, pineapple upside down cake in a jar!...We were VERY pleased......Mama is SO proud of her baby girl, lol.....

So we learned a couple of years ago that leavening (baking soda/powder) activates when the temperature hits a certain degree and tries to expand. We had mixes in cans that bulged. Theoretically, the food can still be eaten if it hasn't gone bad, but you'd have to add more powder for it to rise.
I just brought home 3 more of those 10 pound bags of pancake mix. I was going to jar it up. I have some that's about 2 or 3 years old, and it seems fine. Guess I'll have to open one and see.
VoodooKitchenMama canning jars will do well with pressure. That’s why you can pressure can with them. Might want to check the lid seals every once in a while.
I check all lids to make sure they're ok. I do add an oxygen absorber in them unless it's sugar or salt. No problems yet! Maybe I'm lucky, or we rotate the food out often enough, before any issues happen.
Hi @Alaska Prepper. Yes. We used to eat these all the time. Gramma would find the old pancake mix and add a bit of melted butter to the mix. It was Sooo good.
@@juneweimar1064 dry canning is placing your product. Oats. Cornmeal, Flour. Pancake mix etc in clean, sterilized jars. Cook in oven on 225 degrees F. For a specific time frame. Gives my mixes an extremely long shelf life. We ate eating oatmeal. Crackers, cake mixes and pancake mixes from 2008 forward.
As an aside: I converted a Blue Apron box into a solar cooker. It came with a reflecting liner which I turned inside out. I used an Ikea laundry rack to tilt and position the cooker. On a sunny mid-September day in Zone 7, I got 100 degrees over ambient temperature midday after 2 hours. Not a bad use for what might have ended in the landfill. I forgot to mention the flat black enamel cookware set in a cooking bag.
Much more useful and effective to just store individual ingredients as separate items. Mixing it all together to make batter takes... 10 seconds more than having it 'ready made.'
I’ve had a couple cake mixes in my pantry in the original packaging for upwards of 10 years. Hot summers; icy cold winters. The mixes seemed fine so I made them up. At my age, experience said to add levening and the cake mixes were just fine. No changes in colour (lemon and vanilla) or smell.

I don’t bake very often so I’d have to purchase it almost every time I did. In a cake mix, I’d add 2 to 3 tsp. I expect there’s also expiry dates on the boxes of cake mixes too.
Baking powder has an acid & base mixed with corn starch that works as a buffer. Double acting means it reacts once when wet, & again when temps get over 170F. Add some more leavening.

After watching your previous video about this, I checked the 4 #10 cans I have of biscuit mix, muffin mixes and pancake mix. All of mine had 10 year best by dates. One said “no leavening “ on the can. They are about 4 years old, so I guess I will start using them.
Yes it’s still good in my opinion. You might need to add a little rising agent to it. My self rising flour did it to my Mylar bags. They didn’t burst but they were some tight balloons
If you buy toothpaste to store make sure not to buy the baking soda and peroxide kind...someone I know did and the tubes exploded after a few months...
This happened to me with #10 cans. the problem with adding more baking powder later made a bad taste but I used it with white flour and yeast and it made great bread.

I was hooked after the first try.... now if I could find a way to store cheese that picky kids would eat.....lol.
I opened up a box from a purchase I made in 6/2017, which contained 2 #10 cans of blueberry pancake mix. Both cans are bulging on top/bottom each. I called the company and for what it's worth, they are NO Longer selling the pancakes mixes.

The only concern I have with mixes long term is if they have fat in them. Fat goes rancid after a period of time.

It will no longer have the "rise" factor; you could use a half teaspoon baking powder with every cup of mix to restore the lost rising factor.

I keep mine in an old gallon pickle jar. I don't think it is completely air/gas tight. But it's not in there for more than a couple months.

Myrna Dupey plastic will let air escape. It is not solid like Mylar bags.

@Irma Wing if no baking soda or baking powder there's no rush. And it's best to mix up leavening as needed for proper rise anyway.
Edie Boudreau This was biscuit mix and the directions say to add baking powder when you make the biscuits. So no problem keeping it long term.

The pancake mix leveling can be added and pancakes will rise and cake mixes too.
Maybe vacuum sealing would be better. I hope so because that's what I've done.
Its chemical levening it will react and create gas with the little moisture in the bucket

I opened up a box from a purchase I made in 6/2017, which contained 2 #10 cans of blueberry pancake mix. Both cans are bulging on top/bottom each. I called the company and for what it's worth, they are NO Longer selling the pancakes mixes.
