  • Chef Stefano Secchi of Rezdôra in NYC raids his home refrigerator to make passatelli in brodo, an Italian rustic pasta dish served in a rich, flavorful broth. Stefano’s brodo comes together with kitchen leftovers like rotisserie chicken, celery, green onions, carrots, and the rinds of parmesan cheese. The passatelli is made using a potato ricer and consists of bread crumbs, egg, a little flour, and lots of parmesan cheese. The result is a simple and flavor-packed dish that even a toddler can love.     That’s amazing, looks so delicious and easy! And that one is exactly my potato masher haha, it’s probably 30 years old here in my parents house. I found it so rad that I can use it for that too! Win win

    I had this growing up and we called it Passatini. My mother was from the Republic of San Marino and I haven’t had this since she passed away twenty years ago. I’ve been thinking about it a lot lately and plan to try making it thanks to you!

    My mom, now 93 often made this wonderful dish and passed the recipe down to me. Like you, I grate fresh nutmeg...I also add lemon zest & black pepper to the bread mixture.
    Thank you for the tip of adding a little flour, I never knew to do this.

    The _contraption_ he uses for the passatelli, as he said, is good to make mashed potatoes, and you can also crush tomatoes for sauce, once you have boiled them, if you're not too fond of tomato peels.

    It's ironic that most people who have designer kitchens don't cook at all, they make reservations or have cooks do all the cooking. What a waste. This man is a true artist he can out cook anyone even in the tiniest kitchens, he doesn't need a huge kitchen.

    That tool is a potato ricer. You can still buy them. They are great for prepping potatoes for potato gnocchi as well.

      It’s delicious. I make it every time my children are sick. I just don’t dump an entire truffle on top of a peasant dish, but to each his own; if you can afford it, enjoy it. My potato ricer makes mine look more like spätzle, but I’m sure they taste the same.
