- Mutton Nihari Recipe Description:
Main Ingredients:
Mutton 1kg
Ghee or oil
Ginger and garlic paste 1tbs
Onion (finely sliced) 3
Tomato 1
Laziza Nihari masala
Flour (used to thicken the gravy)
Salt and red chili powder 1tbs
Lemon, ginger juliennes, fresh coriander for garnish
Preparation:
-Frying the Spices: Start by heating ghee or oil in a large pot, then sauté finely sliced onions until golden brown. Add ginger and garlic paste to release a robust aroma.
-Cooking the Meat: Add the mutton pieces and fry them until they are browned and coated with the spices. This is the base of the Nihari.
-Adding Spices: Now, add the Nihari spice mix along with salt and red chili powder, mixing well to coat the mutton evenly. Let the spices blend into the meat.
-Slow Cooking: Pour in enough water to cover the mutton, then let it cook on low heat for several hours, allowing the meat to become tender and the flavors to intensify.
-Thickening the Gravy: Once the mutton is tender, a mixture of water and flour is added to the pot, which helps thicken the stew. Cook it further until the gravy reaches a thick, smooth consistency.
Serving:
Garnished with fresh ginger juliennes,green chillies and a squeeze of lemon juice. It’s best enjoyed with naan or khameeri roti
