@@Growyourowncoolclimate it seems a common method for greens..nhk English, had a chef, blanch spinach briefly, then plunge..( leaves then rolled on a sushi-mat, to squeeze out water)..then chopped into little portions to add to a soup). Japanese have a nice way with food .
