    Since the first time you guys discovered this combo I've been meaning to make a cream ale with jalapeno and strawberry. Time got away from me but I look forward to making it for the summer next year

    I made a Jalapeno IPA at one point as a small batch and I love how it burns on the way down just slightly. I made a mistake using dark rum though, since it was all I had at the time, and that flavour added a little... Unexpected flavour.

    If I haven’t said this before since finding this channel and podcast it’s quickly becoming my favorite. Steve reminds me of a grandpa everyone wants and every guy would want to be when they get to that point in life

      I like small batches. Less expensive and easier to make sure the yeast is taken care of. Using good honey is also key. -James

    I am going to do a mead with apple cider, a braggot i believe, first mead type in years for me.

    Another great video as usual. You guys got me into beer making with you Mr. Beer espisode years ago (which is one of you most popular). Been brewing since and always enjoy your content. You guys also recommended the Historical Brewing Techniques book which is great as well as the 18the & Early 19th Century Brewing - reading now. Best to you both.

    I just racked my first batch of mead yesterday. I started out 10/12 @ 1.070 -> 1.000. It is still pretty cloudy and a strong alcohol taste with nothing else. I guess I need to let it go longer.

      My stronger batches of mead often have an unpleasant off flavor at first. The off flavor always goes away after aging. Sometimes it takes a few months. Don't give up.

      Mead almost always improves with age. Don't give up on that sucker!
