I don’t care if you’re making Polish Potatoe pancakes, German liver sausage or Mexican quesadillas!!! If it smells good, looks good and I can fit it in my mouth, ... next stop is my stomach!!! Not to quibble, but Spanish cuisine is from Spain; Mexican cuisine is from Mexico. As someone who has been to both countries, I can say that they don't have much in common, but are both (in my opinion) delicious!

I made the Chicken Tortilla Soup for family night at the volunteer fire department. It along with the fried Tortilla strips seemed to be the highlight of the supper. Thanks for the great recipe.
Chicken tortilla soup is hands-down my personal favorite soup. Polish food, German food, Mexican food, it's all food, and delicious food brings people together like nothing else does.
My mom would have loved the scenery piece you had put in the middle of this, especially with your Teepee in the shot. My mother was all about the old west. She would have loved your channel had she still been alive today to see it. On top of all the recipes I've learned from you and your book (good book too, my aunt copied a few recipes from it for herself) thank you for reminding me of happier times with my family in each and everyone of your videos.

I'm a Scotts-Irish born again believer in Christ - and Mexican food is my favorite food on the face of the planet. And I've been to the Southwest and Midwest a number of times, and Mexican cuisine is just (a great)part of the landscape in those areas. Great channel - great people. Thanks, Kent!

The two are almost interchangeable, and what a lot of folks don't know is, true Mexican food did not use onions, garlic, tomatoes, or lettuce as much, prior to about 1960, as they do today. That is the American influence on their cuisine. Good is good, and great cooks the world over blatantly steal from one another, to put great food in front of their families.
Food is food no matter the ethnic background. Nevertheless, I so love what you do and use your recipes at home, which my friends and family enjoy! (I always tell them where I got the recipe) one of my bucket list items is to cook some good food along side you! God bless my friend!

Tip: put some mozzarella cheese on top of your served bowl, put a lid on it and let it grate. (Here in México, we use this cheese named "Queso Oaxaca" but mozzarella is quite similar"

I've learned to cook from people of every color (even some shades of pink!) from Texas to Mexico the long way around. East Coast, West Coast, Gulf Coast, Louisiana, all across Europe, Japan, China, Vietnam, India and some I never knew where they was from! And if them little green men show up with some groceries, I'll try what they're having! I've eaten everything from Avocado to durn near Zebra and it's all good! I do tend to lean towards Cajun, Creole and Soul Food, but variety is the spice of Life! Living in a tourist trap does have some advantages! I appreciate you and Shannon, Kent. See I am one of the guilty people that threw in like 5 different cans and I did boil my chicken beasts and used that broth and added tortillas but NEVER thought to fry them!!! My husband and I love this the red sauce and I've never made it.... YOU Sir just taught me a fine lesson and I'm EXCITED to make my own red sauce and make this soup your way! I'm with ya on the black beans yum 😋 yum!! Thank you!!!! Ya know It doesn't matter if your a cowboy ( I love me some cowboys, I married one!) It's your LOVE for food , and cooking it amd sharing it with us is definitely a bonus for us ALL no doubt about it!! Your right doesnt matter who's around the dinner table, if you cook they will come! My parent's ALWAYS said that and did that .... For if they knew someone didnt have a meal or would be alone on holidays they had them at our table for all the years i can remember.... I'm Thankful they did and showed us 5 kid's that's what life's about... giving and sharing and caring... plus you meet alot fine folks that way..... I still run into folks that remember my moma and daddy doing that for them and how much they miss my parents too... thing's I didn't know they did for folks like taking them groceries and paying an electric bill etc .... it warms my heart .... they were not rich but rather humble and just helped out when they could ... My parents are from Guadalajara, Jalisco. I come from a family of ten, not including parents. My Moms idea of chicken tortilla soup was making basic chicken soup, no veggies, and serving the bowl with 3 warmed corn tortillas into the bowl. I was the only one with the tortillas in the bowl, with a wing. When I grew up, I commented to my Mom, and she said, "you are raising false info against me". I thought it was the funniest of her comments! I miss my Mama...RIP. P.S I appreciated your recipe, gotta try this on my cheat day!

Mr. Rollins, you should NEVER have to explain why you decide on what recipes you present. We tend to forget our history and that other countries had interests in America. French and Spanish had control of large parts of the Midwest and Southwest. Its these influences that carry over to regional cuisine. Without the French and the Spanish you wouldn't have Creole and Cajun cooking, and with out the Spanish influence in Texas and around the panhandle you wouldn't have Tex-Mex. Personally, I cant handle heat so I can't make a lot of your recipes... But I don't care, as I enjoy watching a true American show his love and passion for simple old fashion cooking , while showcasing this beautiful country in its grandeur. Wishing you and Mrs. Rollins all the best for 2019, from pretty cold NYC.

I've learned to cook from people of every color (even some shades of pink!) from Texas to Mexico the long way around. East Coast, West Coast, Gulf Coast, Louisiana, all across Europe, Japan, China, Vietnam, India and some I never knew where they was from! And if them little green men show up with some groceries, I'll try what they're having! I've eaten everything from Avocado to durn near Zebra and it's all good! I do tend to lean towards Cajun, Creole and Soul Food, but variety is the spice of Life! Living in a tourist trap does have some advantages! I appreciate you and Shannon, Kent. See I am one of the guilty people that threw in like 5 different cans and I did boil my chicken beasts and used that broth and added tortillas but NEVER thought to fry them!!! My husband and I love this the red sauce and I've never made it.... YOU Sir just taught me a fine lesson and I'm EXCITED to make my own red sauce and make this soup your way! I'm with ya on the black beans yum 😋 yum!!

Ya know It doesn't matter if your a cowboy ( I love me some cowboys, I married one!) It's your LOVE for food , and cooking it amd sharing it with us is definitely a bonus for us ALL no doubt about it!!
Your right doesnt matter who's around the dinner table, if you cook they will come! My parent's ALWAYS said that and did that .... For if they knew someone didnt have a meal or would be alone on holidays they had them at our table for all the years i can remember.... I'm Thankful they did and showed us 5 kid's that's what life's about... giving and sharing and caring... plus you meet alot fine folks that way..... I still run into folks that remember my moma and daddy doing that for them and how much they miss my parents too... thing's I didn't know they did for folks like taking them groceries and paying an electric bill etc .... it warms my heart .... they were not rich but rather humble and just helped out when they could ...
Very good life lessons for us kid's!!

My parents are from Guadalajara, Jalisco. I come from a family of ten, not including parents.
My Moms idea of chicken tortilla soup was making basic chicken soup, no veggies, and serving the bowl with 3 warmed corn tortillas into the bowl.
I was the only one with the tortillas in the bowl, with a wing.
When I grew up, I commented to my Mom, and she said, "you are raising false info against me". I thought it was the funniest of her comments!
I miss my Mama...RIP.

Mr. Rollins, you should NEVER have to explain why you decide on what recipes you present. We tend to forget our history and that other countries had interests in America. French and Spanish had control of large parts of the Midwest and Southwest. Its these influences that carry over to regional cuisine. Without the French and the Spanish you wouldn't have Creole and Cajun cooking, and with out the Spanish influence in Texas and around the panhandle you wouldn't have Tex-Mex. Personally, I cant handle heat so I can't make a lot of your recipes... But I don't care, as I enjoy watching a true American show his love and passion for simple old fashion cooking , while showcasing this beautiful country in its grandeur. Wishing you and Mrs. Rollins all the best for 2019, from pretty cold NYC.
