- I love lilac flowers. I preserve their scent in the form of sugar, which I then use to sweeten tea or flavour summer lemonades.

10 large lilac flowers
150 g sugar
juice of 1 lemon

1. Clean the lilacs (you can rinse them, but then you need to dry them). Pick the flowers and put them in a container. Stir and leave at room temperature for 1 hour to dissolve.
After 1 hour, stir the mixture. You can see the lilac syrup slowly start to form.
Place the syrup in the refrigerator for 8 hours or overnight. You can stir it from time to time.
2. Remove from the fridge and strain. Add 150 g of sugar. Stir.
3. Preheat the oven to 40°C. Put baking paper on a baking tray. Pour the liquid onto the baking paper and spread it out. Place in the oven to dry for 2 hours.
Take the mixture out, stir and dry for a further 2 hours.
Take the mixture out, stir and dry for another 1 hour. The mixture dries slowly. Repeat the process until the lilac sugar is completely dry.

@Jane ́s Cooking Diary Is there any way you can post basic recipe amounts in the description? Im adhd and trying to pick your amounts out of the video is hard. Basic recipe and ability to refer to it would help so fucking much. Im about to try to do a lot. Also, do you know the final volume of sugar you got? Id love to know what to expect my yield to be.😊
@@musewinter9369 The final amount of lilac sugar after drying is about 270g. Try the quantities in this recipe to see if it tastes good before you go for a larger volume. The recipe is for 1 baking tray. If you want a larger quantity, try 20 large flowers, juice of 2 lemons and 300g sugar for the base syrup. Strain the syrup then add another 300g of sugar. Good luck.🙂
Can you use a dehydrator?
Yes, I think you can. It may take a little longer, but the result should be the same. Let the sugar succeed.👍
