The difference in color is insane! My uncle used to get quartz of honey and it would have part of the comb in it. He would always give us a little piece to chew on. If we used honey more I would consider getting bees. It’s just so cool!!

Seing the stark difference between the seasons of honey is AMAZING! I would expect the flowers that are often blooming in Springtime to have more abundant nectar because of the abundance of rain and the nature of the flowers. Then, through Summertime, there is less rain in general and though there might be more total flowers, they're each offering less nectar (but sweeter because of less water content) than the ones in Springtime. More work for the bees, and less overall honey, but so much more concentrated flavor. At least that's what I think. LOL
Love honey, Heather - it is so awesome to see the differences between fall and spring honey! I bet you could even use a bit less of the fall honey and still get the magical honey flavor. The percentage of moisture seems to definitely impact how quickly it pours too. I noticed the spring honey poured so much faster and smoother than the fall honey. Those jars are perfect! I have mentally debated whether or not I want bees on my future homestead, and I do think they are worth the expense/work. Honey can be pretty expensive, especially if you get good raw local honey. Even semi local (like just from Florida) is pricy compared to the honey they combine from different countries. 💚🐝🍯🐝💚
Next time maybe set up a little heater to warm up the honey; it will drain faster when it's warmer; like a peice of plastic over that Aframe and a little electric heater inside of that. But oh yummy honey. That fall honey does look like molasses! Makes you wonder what was blooming when they put that in. Maybe a fun thing would be when you notice them filling a frame (maybe number the top of your frames for reference?) look all around at what is blooming and make some notes of what the bees seem most interested in. Look at the neighbors fields and any little wild areas nearby too.
What a great, messy harvest! We kept bees for about 5 years and there's nothing more exciting than knowing you're going to be able to collect a beautiful golden harvest like that!
Wow, I make my own cinnamon honey, I love raw honey, this is one thing my husband said NO about it's bc I'm very allergic to bees. I buy our raw honey from an Amish family that's opened a bee store where you can buy stuff to start your own bee colonies but you also can buy the honey that they have from their colonies. There is a store fairly close to me that has bulk grains and beans and imported goods. I counted over 10 different types of honey there. From fireweed, to buckwheat and lots in between. I see the hives all moved into the dykes between the cranberry fields in the spring. There are bee keepers who are hired by the ministry of forests to take their bees into the mountains in spring. There is lots to learn about honey. We had a neighbour who was into natural foods and do it yourself things. He ate honey most of his life because it is more healthy than sugar. As he got older he got gout which was attributed to the honey. I gather moderation in all things is the theme. Thank you for this lovely post. 😊

My search engine, which now has artificial intelligence, says essentially high protein, including legumes, and high sugar, including alcohol, diet. So it is not that honey is the problem, just the proportion and the ability of the body to process it completely. I am on a mission to sort my menu toward health. It is a bad time of year to do so! 😉

Haha Right? Milk is made by pulling nutrients like protein and fats directly from the blood and has antibodies and white blood cells in it much like pus on a wound. Nothing grosses me out haha! It's actually what makes it good for you, the enzymes and things from the bees :)

I’d love to taste the fall honey. I get raw honey from a local farmer and it’s the best honey I have ever tasted. I love it! I sweeten everything with it. ❤ I’d love to farm my own honey bees but there seems to be a lot to it and maybe more than I’m willing to do but I love buying local.
do you have a lot of buckwheat nearby ? The only honey I have had that dark is buckwheat honey. Last month I got my winter supply of honey from a local orchard, local honey is the best honey. I bought a smaller jar of creamed honey to use as seed honey and now all my honey is nice smooth honey too.

Makes sense to me! Definitely would make me want to harvest at both times of the year, to ensure getting some of both types.
I don't think you are too far off on your assumptions, I was reading how darker honey could contain more minerals.

Yeah and this was just 6 medium frames and we got 12 pints of honey plus the wax, worth a lot especially for one person!

I think the dark honey is from Japanese knotweed. They love that in fall!!
Dark honey also comes from when bees collect the honeydew from aphids on trees... because flowers are rare this time of year

Not that I know of but I suspect this is from Japanese Knotweed or the bees farming aphids off of the oaks.
My husband thinks I am nuts because I do not like honey lol
