Here your answer they was called 1. Jacket potato because back in the day bake potatoes/spuds skin on aka (jacket) was a convenient hand warmers by stuffing the piping hot “jacket” potatoes in their coat pockets for warmth before ultimately eating them. 2. Potatoes soak up water more easily. So you should think of the potato's peel as its protective jacket. If it's removed before boiling, the flesh will soak up too much of the water in the pot. My grandma and my mom were Sicilian Italian and had some wonderful recipes, too. Though I was there when they were cooking, there just wasn't enough time. There never is. I still have copies of some of their recipes, but I wish they were here to make them. Keep doing what you're doing. God bless and take care!

My Mom wouldn't let anyone in her kitchen & it was like pulling teeth trying to get just 4 of her recipes. You wouldn't happen to know how to make beef barley soup, would you?
You forgot to put a slice of pickle in the inside ,every true German knows a slice of pickle goes in the inside of this dish!!!!! But other than that it looks delicious ❤
Add some dill pickle or bread & butter pickle to that, and you'll have how I grew up eating them. Except we cooked them in a crock pot with beef broth and made gravy with that.

I'm German and was taught by my mother who learned from my grandmother and i hate to tell you buddy but you are missing garlic dill pickles in the rouladen and even add some pickle juice to the gravy! other than that you nailed it!

I love this recipe! In my potato dumplings I put homemade croutons to give it some extra flavor.
Use cornstarch it doesn't clump up and it is better to thicken and makes a crispy crust
