That's a nice haul of elderberries! We used to pick elderberries when I was a kid, all for jelly. Yum! We would forage for them in the mountains. My dad knew all the logging roads, so we had no problem finding them.

I just bought a used one from a lady I know and I just bought some concord grapes today and tomorrow my hubby will be helping me make some juice, which I will then turn into jelly...I am so excited...God bless you and your family...Sherri-Idaho
Hey Katie, we live in northern BC Canada and these elderberries don’t grow around here but there are now a hard black elderberry hardy for our climate, I have a couple fairly new bushes that aren’t producing yet. I am so looking forward to when they do. 🌷🇨🇦
Your elderberries are twice the size of the ones we get here in PA. We have a lot of wild elderberry bushes. We do get to cut a lot of elderflower but when they turn to berries we are in the middle of harvesting our garden so it makes it hard to go get the elderberries AND we have to be fast because the birds eat them right up. We use to make elderberry wine. So good but we can't drink wine anymore. Both my husband and I became allergic, so now we have a basement full of different kinds of wine. I either cook with it or we give it away as gifts. I do have some dehydrated for when I need to make syrup.
Hi Minna!! I dabbled in wine making- I’m not sure how to NOT make it so strong. When I made it last we used elderberries… we ended up mixing half and half with store bought when we drank it cause it tasted like hard liquor😖We no longer drink alcohol either. I just pick the clusters and throw them in the freezer until I have time to deal with them. Picking a bush of clusters only takes a little time. It’s the processing that takes time but they just sit in the freezer until I can process them. 😅 I need to go get more!! The bushes are loaded down.
I live in washington state and i dont think we have any elderberry farms nearby or foraging. (I live in the desert area so definitely no foraging around town) i started growing elderberry plants 2 years ago and last year got my first few flower clusters but they didnt pollinate well. I was keeping them in pots but i ripped out a branch and stuck it in ground to see how well it would take and it did fantastic. I opted to sun dry my berries and i got about 3 cups of dry berries and im really excited about it. I pulled a branch from my other elderberry and stuck it in ground this year so next year i should get double or more. Im also going to be pulling branches to plant at my moms next year so soon i might end up being the local elderberry farm 😂
Wow! What an abundant harvest! That's wonderful! I'm in southern BC and I know there are elderberries in the area, I just don't know where to forage for them. I just found out that a local farm where I get my honey has started growing elderberries so I may be able to purchase some frozen berries from them. I've only had 1 thing containing elderberries and it's an immune boosting liquid supplement from Mountain Meadow Herbs. I purchased a steam juicer this year and was excited to try it on blackberries but I waited too long to go picking and missed out. I've used it for apples and it makes a decent juice. It seemed almost a little watered down so I was wondering if there was too much steam coming up, condensing and falling back down into the juice pot. Does your friend love her juicer? What kinds of juice has she made with it and does she find them to be watered down? Thanks! :-D
I found the first bit of juice released was watered down but it got much more concentrated as it started releasing juices. My friend uses it for plum and apple juice. I had to return it so she could juice apples. She says she mashes everything down to extract as much as possible. If you line with a cheese cloth you can potato mash the fruit down to extract more juice without pulp or seeds getting through.

I made applesauce with the remaining stuff from my first couple of batches but for the next juicing day, I'd already had so much applesauce that I just threw it away. It felt like a waste 😢 And the other day I made rhubarb juice! I've made the sunshine rhubarb juice recipe from my canning cookbook and it's good but I think I liked the steamed juice better. Although, it didn't seem like it produced a ton of juice. Oh well. Great way to use up lots of rhubarb. Happy canning!
I doubt you need both citric acid and lemon juice. But it probably doesn't hurt anything. If I were younger I would invest in a steam juicer. They look really handy.
Total overkill on my part after reading elderberry juice can’t be canned due to low acid😅 i got a bit nervous about it so after getting more lime juice I added it to the jelly recipe as it called for it. It’s yummy!

I live in Wisconsin, and they grow wild all over here. I also planted several of my own last year. Love making juice and jelly.

I absolutely LOVE my steam canner! I haven’t done elderberries yet with it but it’s my fav way of getting cranberry juice concentrate by far!
