    Great looking pizzas! Just wondered if you used any wood chunks for smoke flavor? Great cook! Could definitely hear the crunch. Yummy

      Thanks Jay! You know, I hadn't realized I forgot to mention wood until I saw your comment! Yes...I buried 3 small chunks of apple wood in the coals. Appreciate you stopping by.

    I really like the parchment paper idea better than cornmeal.

    I think your infrared thermometer is off by like 150 degrees. If it was about 500 degrees the parchment would've burned completely. Fahrenheit 451 is the ignition point of paper, parchment is no different.

    Also experiment with scattering the stone with polenta (rather than the parchment paper) like the Italian Pizza Ovens do to give a better result.
