It’s time to try a classic marinade after this which a lot of people use. Italian dressing!!! Maybe for slight variation also include an Italian balsamic dressing too!!!😁👍
All salad dressing is mostly fats and oils with acidic ingredients like vinegar. So if you marinade by coating the steak in those, its the oil that traps the flavor into the steak as regular salt and pepper can fall out of the steak if not rested to soak it in. Using merely an olive oil rub on a cooked stead with salt mixed into the oil would make it stick very well to the cooked meat, and I think korean style Sesame oil rub with salt and pepper mix on a cooked steak would work fine if used lightly.
Thousand island dressing is awesome. I actually put it on my steaks and marinate them over night then put on the grill. But I don’t wipe off the excess. I grill them up and my kids love it!
I think what added the extra umami in the 2nd steak are the anchovies in the dressing.....anchovies are an excellent seasoning for meats, especially lamb

Like having 5 steaks : 1 Control (obviously) 1 Tenderizer steak 1 Dry aged in ??? steak 1 Compound butter steak And the final one where you dryage the steak in ???? tenderize it with ???? and compliment it with what ever compound butter you chose? edit: Just examples though, there are more things you have done that might be interchangable

The stuff from the store is OK at best . If you use quality ingredients and make your own , it's SO much better . And I think that it'll do more for a steak than the mass produced stuff that leaves the expensive ingredients out and has all kinds of extra crap tossed in to make it shelf stable longer .

As they cycled the meat from the walk-in to the prep area they would brush over them, guess what, their house Italian dressing that would do a quick marinade before grilling. I would say the an hour before grilling at most. I worked front of the house then, so I can say the guests raved!!! For me, I stick with local meat, salt, pepper, and charcoal.
You've already got 57 best sauces and at least 15 life-changing recipes but the only one that actually did shit for me was the blended ginger on steak. Not more than 3 hrs tho, 24hrs marinade makes it taste like full ginger.
