    I did the pantry challenge from January-April this last winter and it was awesome. I picked right up where we left off and haven't grocery shopped since April 5. I love not going to the grocery store, but yet always having exactly what we need on our pantry shelves.

    Hey Jessica, I’m your neighbor to the south, we’re in south east Kentucky, and I’ve been watching your channel for a while now. I’m fifty years old, a single mom of five and we have our little one and a half acre homestead just beginning , so your videos have been very helpful!! My youngest kid is eleven and he is autistic and has Down syndrome so life for my family for a whole has had it’s challenges, to put it mildly, because he has explosive disorder and omg he’s broken many things over eleven years time,lol.!! But I just wanted to say hello and thank you for your videos , they’re motivating me to stay on course with trying to be self sufficient and get our homestead up and running from season to season, so it’s all new but we’re getting there! Absolutely love your outdoor bathing area, that’s relaxing just to think about and I love the way you have it set up!!       Hi Jessica. I too have an adult son with DS/Autism and there can be some challenges for sure but I just wanted you to know you have someone in your corner. The Down Syndrome Assoc has had some support groups and material for DSw/Autism if you are not already connected. I truly understand.

    It always a joy to watch your videos. I am a homesteading, homeschooling, home-birthing mama with similar ideals. There aren’t many women in my area that share in my endeavors so it is nice to gain inspiration from your videos and it can feel like sitting down with an old friend sometimes.

      What an exciting Summer, a June Pantry CHALLENGE. I came came along with you Jan. 2023 for 6 weeks, and I was amazed at how many meals I could come up with and how much money I saved. I find your new one level family area outside seems much larger and gives so much more room for the children. I think it looks good really nice and functional. I also find your gardening more economical and not so costly. Making use of what is available and adding a little every year, a reasonable attitude. You were given the gift of teaching, and all of us are or can benefit in so many ways. I appreciate all I have learned from you and want to thank you.😊

    When I hear, " I have some exciting or wonderful news," my mind always goes to a baby! 🤣 A second challenge is very intriguing. We also still have a lot of canned goods. In our home there are only two of us now and my daughter has just given me my 20th grand child. I usually gift a lot of last year's canning to my son, (who has 6 children), when I am starting canning for the new season. I love seeing young people like you living like we did "back in the days". I am teaching my children to be more self sufficient. Good luck on your new challenge!❤️

      @@threerivershomestead a great summer recipe is gyros w homemade pita bread, hummus, lettuce, cukes, tomatoes. You also could make curries w chicken, chickpea, canned tomatoes, coconut milk, and rice.

    The outdoor tub is such a good idea. I typically buy one of those cheap blue plastic pools for my kids every summer and usually every afternoon, they play in the water and I add some soap for bubbles. That counts as their “shower” during the summer 😂

    A pantry challenge in June is a brilliant idea. We’ve done the January challenge twice now and we’re still working through some canned goods, so this is great. I’m planning to learn how to do some canning as well so this pantry challenge will help make more space.

    Love the June pantry challenge idea! Your outdoor setup looks amazing. If you have a pizza stone for your green egg, you can bake pizzas on it too! You can also bake bread.

    Wow! All I could think of is you being a Proverbs 31 woman. What inspiration! You said you rarely get mosquitos. I’m in Texas and we have mosquitos everywhere.     LOVE THESE IDEAS! We live in the city and don’t have a garden, but I really like to keep my food (Eating out/groceries) bill as low as possible as a homemaker with 2 sons, 18 & 20 living at home. This is a perfect opportunity for me to pull out some of the “odder” things I have purchased and find a way to use them in our meals! Great idea, Jessica! 🫶🏼🫶🏼🫶🏼🫶🏼🫶🏼

    I love the idea of another pantry challenge. We do one in July when our garden is in full bounty and we call it "no buy July." Your outdoor tub looks great. I love the way you raise your children to be resourceful. I have also never seen a sun oven, I definitely want to research more about this. Thanks for sharing your life with me.     Hi Jessica. I so enjoy learning from you about cooking, baking, preserving and gardening. I am a homeschool mom with 4 under 7…my baby girl is actually close to Hannah’s age as she was born in November. You shared something about caramel and I was just making a caramel apple dip for my kids that turned out really yummy. I thought of you and wanted to share. Although I couldn’t find the video with the recipe but I remembered the ingredients and just kind of experimented until the texture was right. It is about 12 dates soaked for a bit, about 1/2 cup or more of coconut cream and maybe 2 Tblsp honey. Blend until smooth and adjust liquid as needed (I only had canned coconut milk so I used the cream on top and added some of the water in the can). It turned out yummy and my husband even liked it.     Yes. Jessica. Two videos a week is a blessing. I was just reflecting about your outdoor bathing. I love that you demonstrate joy in a deeply Christian home. In my experience, joy was seen as sinful and couldn't side with you more! A childhood of laughter and splashing will keep the children coming back, in so many ways.

    Love your outdoor bathroom, looks fantastic. I’ve showered under the stars while camping and your right there is something very special about it. I think your grilled dinner looked fabulous. Your such an inspiration Jessica, managing so many things at once and a big family. I finally got my winter vegetables planted last week, yep I’m from Australia so we are starting our cooler season. Also planted for the first time a blueberries, hoping we have enough cold hours for it to grow and produce. Looking forward to your next video. 😊

    Jessica sometimes I feel your timing is divinely inspired. I normally watch your videos early in the week I've spent 5 days frantically preparing for a typhoon. I just finished your video as Category 4 winds are approaching and we are shuttered in out home here on Guam. Typhoon Mawar is the biggest in over 20 years. We went out this morning and picked up 50 pounds of unripe Mangoes that had fallen. We've already lost several banana trees. We're anticipating being without power for a week to a month. I share your videos with other military spouses here and what amazing timing your doing a June pantry challenge. It will be awhile before we see fresh again and all our fruits and vegetable crops were at the height of our dry season harvest so we're losing so much. Thank you, thank you, thank you this will be such a blessing in our time of need. If you don't here from your Guam viewers for a few weeks you know why but we will be back! Now off to check on the chickens we brought all of our hens inside the house to weather the storm.

    Yes!! I’m in southeast Michigan and we’ve had light frost up to Memorial Day. I had to get my tomatoes and beans in the ground. They were busting out of the pots. I’m worried about my squash and cucumber plants. It’s way to cold yet at night to plant inground. The nighttime temperatures are still 43-45. My squash will die….

It was about TART vinegars this woman has a shop in New York and makes these incredible vinegars herself - with flowers, ginger, grapes and oh so many more! She has an email where you can sign up and get notified of her new creations, all vinegars. Just wanted you to know.

    Pantry challenge during winter for us Aussies is awesome. Granted some parts of Australia don't actually have a 'winter' & can grow all year round. I cant wait to see how Aussies manage it. I preserve not a lot due to being able to grow a lot of things all year round, obviously some things grow considerably better at certain times of the year & there are a few things that don't grow in our summer as it's to hot. If there is a will there is a way though. Great news.

      @Su Ra they grow better in winter where I am. Our summer is way to hot but I live in far north Queensland. I'm just about to plant a whole new batch of tomatoes. These will produce what I make sauce from.

    What I typically do in the summertime when I would like to bake, I just bring out my roaster oven and set it up in my backward on my metal patio table, and I bake away!

    I’m jealous of your rhubarb plants. I grew up with rhubarb on the East Coast. Now that I live in Texas, at least, in this area of Texas, we can’t grow it. ☹️

    As always you give so many exciting ideas to us. The homestead is so lush this season. My family typically grills all year around-in zone 9- if we can brave the heat and mosquitoes. My garden is potted but yields amazing produce. Our challenge is pests and squirrels. They are not so adorable when they wreck vegetable pots to plant their nuts. Somehow we mange to coexist. I am looking forward to the June challenge. It will be fun to see gardeners around the world. Thank you for sharing your life . Bathing Under the stars is the ultimate spa. Have a great week.     PLEASE do a tutorial on how you make skincare using lemon verbena (or was it lemon balm). You mentioned it in a video a year ago. So my herb has patiently soaked in oil waiting to be transformed into skin care. 😂 So glad for the extra videos. I’ve learned so much. ❤

    In Poland, we mainly eat radish with sour cream and salt and chives, radish with white cheese, bread with butter and radish, bread with butter, sausage and radish, there is also a cold soup called "chłodnik"

    Good morning Jessica. I LOVE the idea of a June pantry challenge. However, living on a city lot as I do, I typically spend time each June hitting my local orchards for strawberries and cherries. I'll still be doing that because we eat those frozen fruits all winter long. In February (winter pantry challenge), I was able to make a strawberry shortcake for my son, who was in awe at how much better it was because I had purchased seasonal fruits to store. My goal over this summer is to clear out my deep freezers to make room for the meat I've ordered from a local farmer. I also do not have a huge garden, so I do go to the farmer's market for CSA and other produce to feed myself, as well as preserve in season foods. I typically spend my summer paychecks purchasing all of my paper products for the year, so I don't have to haul those home in winter weather. Yesterday I grabbed six boxes of tissues. Given that we all have seasonal allergies, I always have at least one box open in the house. Today's menu involves making a salad, roasting asparagus (farmer's market), baking potatoes, roasting corn on the cob (leftovers will be frozen to make enchiladas over the fall), and grilling steaks on my Mother's Day gift. My habit over years of preparing Sunday dinner for my adult sons has been to cook lots of foods that I can eat as leftovers for the following week. I know that steak does not lend itself to being a leftover food, so I will plan other options. We are into the last two weeks of school, and I'm not likely to have a lot of energy left at the end of any school day. My plan is to preserve as much as possible over the summer, so that winter meals are ready to serve when my sons are hungry. There is a current guardianship case before the courts to allow them to come home permanently, for which I would appreciate your prayers. It has been exceedingly stressful, as I also had the sewer back up into my basement three times between January and March, and the resultant handyman/plumber/supply cost totaled about $17K. Here in NE Ohio, last frost date has typically been the week before Memorial Day, and we've usually planned to put in the garden on Memorial Day weekend. If I'm making jams in June, I need a trip to the Ashery for pectin and more sugar. I purchased a 50# bag last summer, and am down to the last sealed bag of my stash. That trip was also on the schedule for the first week after school is out. That 50# bag of sugar was enough for all of my baking needs both at home and at school for the last year. I love your content on how to make the most of what you have. Last time I watched the older boys picking violets. What did you make with those?

    It will be fun to follow the June pantry challenge. I don't have the extensive pantry you have but I use your pantry challenges as inspiration to use up what I have at home.
    We had a frost this past week too in SE PA. Ugh. Thankfully my garden was ok because I saw the warnings. I had JUST planted out my tomatoes and peppers. I need to start looking at 10 day forcasts. It could have been avoided.

      we have an old "green egg". they used to b terracotta. everything tastes so much better and tender. it was my fatherinlaws. my husband just had to fix a crack in it, but it is still working

    Three Rivers Homestead we mince some radishes and add to mayo...let set a few hours in fridge and use as a topping for burgers or meatloaf. It does get watery so we use a slottted spoon or pull up the side of the dish to drain.

    Good morning. Happy Sunday. My grandfather had one of the green ceramic bbqs. He smoked all of our turkeys every yr for thanksgiving and Christmas dinners. It was delicious. You will have fun with it. The outdoor kitchen and tub is awesome. Its a great idea.

    I love your outdoor bathtub! I bathed my children under the hose on most summer nights! They loved it and so did I. I’m in my 70’s now and recall those easy summer showers. Lee

    Love to see your root cellar update. I already eat out of our pantry daily and freezers daily. But, I love seeing what everyone else preserves and how they incorporate those goodies into their meal plans.

    I'm sort of joining the challenge. We have been participating with twolilou creates & Linda's pantry no buying meat for 6 months challenge. It's just trying to use up what's in the freezer. Lord knows I need the freezer space lol. Good luck to all that are participating

    We had to make a makeshift tub while doing a bathroom remodel. Set it up in the garage. Put down indoor outdoor carpet bought a new stock tank and ran a hose from the kitchen. Used a pump to drain it. Was pretty cool to sit out there and hear mother nature while bathing.

    I had an outdoor bathtub at my old house and I had planted moonflowers over a hog panel arbor for privacy. I’m telling you all now that has always been my little family’s fun remembrance. I will do it again when I can move to a small house on a few acres. Suburban life is awful, but until I retire in 4 years we have no choice.
