I really like the disclaimer Les does at the beginning. It's not a "don't try this at home", it's a "go learn the skills properly so you can try this at home safely". Thanks again for uploading all of this stuff Les, you're the real deal dude.

OMG, This takes me back to my younger years. My Nana would tell me "Nicky go pick me some rhubarb and I'll make some jam. " I sooo miss those days. Thank you Les for bringing me back to those times. I wish I had your knowledge of all the edibles that were all around me! Because I practically spent my growing up years in woods next to my house. But I was young and dumb, LOL. Watching these videos makes tears come to my eyes. Because I remember so much. We had Blueberry bushes, different kinds of apple trees, pear ,trees also. And I just didn't really appreciate it back then. It makes me sad now. But I remember Nana telling me to go pick Blueberrys ,we were young so we would get bored and eat more than we picked. LOL. BUT this video makes me happy! and a little sad .😊😔

I just discovered this series by finding out about Season two episode 1. I'm hooked. The intimate nature of the films draws me in. Chef Paul's desire to draw upon the gathering experience to prepare and present the dishes is so inspiring. The way Les leads in to each plant and reveals it's unique position and expression on the landscape at large is engaging. Their two different experiences and observations of collecting and using the same plants is revealed in engaging and intimate dialogue. Wonderful films. I am anxious for the rest of season 2 to roll out.

Dandelion leaves make a great salad with some pumpkin seed oil (or olive oil) and balsamic vinegar! We eat them every spring in Slovenia and you can also find it in restaurants that time of the year. Really rich in iron and have a pleasantly bitter taste. The key is to get them right at or slightly before the full flower phase (at that point the taste is the best)

Thank you so much for another amazing episode of Wild Harvest. I appreciate the privilege 🙏. We have a smaller variety of Horsetail in Maine and it's supposed to be helpful for arthritis too. A nifty little ancient plant. They used to grow as big as trees and some scientists say those tree sized plants helped contribute to the earth's coal deposits in a big way. Wood Sorrel is delicious. Lots of it grows everywhere in Maine but the clover leaves have a chevron pattern which helps separate the two plants easily.
