That’s kiwi based sauce
Green is a sweet and sour sauce with kiwi, which has become famous for being used in the Korean toast chain Isaac Toast. The orange color is similar, but it's a bit spicy.
You can make this similar with 4 tablespoons of kiwi-dressing, 4 tablespoons of mayonnaise, 2 tablespoons of sugar and a little bit of salt.

Shan Rez not at all. I’m assuming they wanted to show the full process of how she makes a sandwich becz real street carts have the bacon already cooked, ham already cooked so all they have to do is throw it back on the grill to warm it up and cook the eggs. Throw it on a roll or a bagel and ur off to work. They’ll cook or halfway cook bacon and shit like that ahead of time so it saves time and get customers out faster.
That’s the place I have to call ahead

Usually with street food they would have that bacon pre cooked and on low heat in bulk and then you just say what you want between the bun. None of that lettuce or weird sauce. Its cheap and your out of there in like 30 seconds

Chascoso the crunch adds texture to compensate for the bacon which wasn’t cooked to the crisp and the sauces provides additional flavour. You must have very boring taste in food.
