You keep it at room temp (not in the fridge ) for 2 weeks so that the fermentation process can begin and complete. After 2 weeks, when you open it, you can then transfer it to your fridge
Hi, once I screw on the lid on day 1, I do not open it until the vegetable is ready to be eaten. I try not to screw on the lid too tight such that the gas that builds up during fermentation can find it’s way out of the jar on its own, That way, I don’t have to burp the jar at all

Sauerkraut can remain fresh and healthy for up to a year. Is daikon shelf life the same?
The maximum I’ve done with daikon radish is 6 months but I’m sure they can last longer than that
They get limp but are still good. Lol

I got them from Daiso in Japan. You could check Ali express, they might have it.

Why did you prepare 2 tablespoons of salt, if you only added 1 to the 400 ml. of water?
