So, in my opinion illustrator doesn’t do a great job with watercolor. You certainly CAN use it, but you’ll likely wind up using image trace to vectorize your watercolors, and in my experience that tends to take away a lot of the hand painted goodness you get using watercolors. This is why I prefer photoshop personally!
