    I made them this weekend for an event I went. Very easy to make and bake, I doubled the recipé and got 30+ macaroons. I used a mix of bitter and semi-sweet orange flavored chocolate to dip them. Needless to say, everyone L O V E D it. You and your recipés are incredible Stephanie!

    You could us a mini muffin pan to hold the dipped cookies in place for cooling. You threw me a little bit when you said to use dry coconut--I thought you meant that desiccated coconut which is horrible. It looks like you used the Baker's style coconut that comes in a plastic bag on the baking aisle. I love these kinds of cookies!

    I made these with your cake flour recipe from years ago. Here in my town I went to a mennonite country store and actually found what they call macaroon Coconut. It is basiscally a desicated coconut..
    I wanted smaller coconut to fill molded bonbons. It worked out well. I did see the Macaroon coconut use in commercially made macroons years ago. Seemed very tough though.

    Stephanie….love your recipes and have had a lot of success with them. For the life of me, I can’t seem to make these work. The egg mixture “leaks” out in the oven, making a dry non cohesive cookie. Try 1, was that way. Try 2, I bought fresh bag of sweetened coconut and eggs, and measured everything by weight. Try 3 same as two but mixed the coconut with egg mixture for at least 8 minutes then let it sit to absorb egg into coconut. No dice. Oven is measured by separate thermometer, preheated for 30 min or more. What am I doing wrong?

    • @joyofbaking
      @joyofbaking  ปีที่แล้ว

      While it is normal to have a little pooling around the edges of the cookie, it shouldn’t be very much. If your batter is softer than what mine was, you could add a little more dried coconut to make it thicker. I do have another coconut macaroon recipe that only uses egg whites and also contains a little flour that you could try. www.joyofbaking.com/CoconutMacaroons.html
