- Thank you for watchin my chicken fajita sausage video. On this video, I made some chicken fajita sausages using chicken thighs along with spices and sautéed onions and bell peppers. This sausage was super tasty and although I smoked these, I grilled some over charcoal and they were so much better grilled.

Joe I'm on a low carb diet but with the way that sausage looked I woul even eat a tortilla with it and when you doing more of your food truck videos

The only smoker around here is the neighbor 2 doors down and even if I found and fixed up an old Weber I can't cook with it because I'm in an apartment and any fire outside is a nokey dokey. Therefore, I live vicarious smokin dreams through Joe and this channel. Thank you for the vids Joe, I appreciate them very much. I have finally learned to eat breakfast FIRST before watching. :) About to watch your Summer Sausage vid. Venison Summer and jalepeno sausage is the last kind I was able to make almost 20 years ago. Just made a batch of both beef and chicken for the store. Tried the chicken was great cant wait to taste the beef. You rock Joe! Love that you share your recipes, really helps a guy have a base line to work from to do your own thing. Try a little chipotle Chile powder some time really sets the flavors off.

Have it it bro! Use 1 bell pepper instead of 2, the ones I used were really small. I grilled some instead of smoking them and they were off the chain good. 🤘

Hey Joe. Quick question. Do you freeze the ones you don’t plan eating right away uncooked, or do you cook them all an then freeze them?
I freeze them uncooked. I vacuum seal them but I do freeze them first. I vacuum sealed some raw and the vacuum Sealer sucked all the meat out of the casing. 😁👍

Curing salt is more about keeping the meat from spoiling when cold smoking than vacuum sealing. If you're going to grill these or smoke them at a high temperature, you can leave out the curing salt.
Still you still have rinse the casing before using?

Hey Joe, you said that these sausages were fresh sausages. That they weren't going to be cold smoked. Why do you cold smoke some, and not others? After watching your sausage videos I really want to try it out. Just wondering what the differences are between cold smoking a sausage and not cold smoking.
It all depends if I feel that the sausage would taste good smoked. These sausages are so much better grilled than smoked. Cold smoking gives the sausage a really good smokey flavor. Thanks for watching 👍
