A good hack for the carrot salad is to grate the carrots with a cheese grater. My grandma always does that for salads.

18:38 As Korean, I can definitely call it as Kimchi fried rice. Koreans also usually cook that with the leftover rice. But it's more common to put fried eggs on the top, rather than scrambled one :)
