    * Ingredients
    3.6L milk(Only use low pasteurized milk), 110ml vinegar(30ml per 1L of milk), 1/4 rennet tablet
    오늘의 메뉴는 프레쉬 모짜렐라입니다.
    이번에는 집에서 모짜렐라 만드는것에 도전을 했는데요.
    직접 만들어 보니 굳이 왜 집에서 이걸 하고 있을까... 라는 생각이 들더라고요.
    여러분~ 모짜렐라는 만들지말고 사서 드세요.
    Today’s menu is Fresh Mozzarella.
    I challenged myself to make it at home.

    Buy mozzarella, not make it.
    * Ingredients
    저온살균우유 3.6L, 식초 110ml (1L에 약 30ml), 렌넷 1/4개
    3.6L milk(Only use low pasteurized milk), 110ml vinegar(30ml per 1L of milk), 1/4 rennet tablet
    * Recipe
    1. Quarter the rennet tablet and mix with 10 times the amount of water.
    2. In a big pot, add the milk and vinegar and simmer until it reaches at 32℃.
    3. Slowly add the dissolved rennet.
    mmediately start stirring in slow motion. Don’t stir too much like I did.
    4. Remove from the heat and rest for over 20min so that the curd can form.
    5. Strain out the whey.
    6. Place the cheese in a bath of 85℃ water to heat it up for stretching.
    To prevent the cheese from hardening,, keep soaking in the hot water during stretching process.
    7. Shape the cheese into a ball and put it in 20% salt water to firm it up.

      @@youngjilee5779 맞아요.. 시중에 파는 피자치즈는 대부분 우유 한방울도 안 들어간 기름 그 자체에 렌넷카제인...? 넣어서 인공적으로 응고시켜서 만든다고 하니.. 이런 치즈를 ''모조치즈''라고 할거에요...

    꿀키님!!!! 버터만들어보셨나요?????저는식영과라 가공실험을 하는데요ㅎㅎ 버터ㅠㅡ진짜최고였어요 그냥 생크림 을 통에넣고 마구흔들면 유지방이 뭉쳐져서 만들어지는데요! 둘이서 흔들어도 와 ..더이상은 못해 할정도로흔들어야 뭉쳐지긴하는데 진짜와..진짜 맛있어요ㅠㅠㅠㅠㅠ크림화를지나 투명한물이나올때 물빼주며 뭉쳐질때까지 계속흔들구요!! 소금 살짝넣구 잘섞고 랩에다가 싸서 냉장보관하시면 딱딱하게굳어요!완성!!!
    그 추천해주신 파리바게트효모빵에발라먹어두 쓰러지구요😱 거기위에딸기청속 딸기한점얹어먹어두진짜맛있어요ㅠㅠㅠㅠ 엄청꼬소하고 미쳐요!!!! 저는 매일우유생크림500미리사용했는데요! 꽤나와요!!!! 진짜치즈처럼 굳이해야하나..싶지만 진짜맛있어요엉엉😭

      옛날에 이거 해먹어보겠다고 생크림 남은거 열심히 휘핑해서 만들었었는데 가당생크림이라서 달달한 버터가 되었던게 생각나네요ㅋㅋㅋ...

    I just randomly clicked on this video and I like it! surprisingly it is so relaxing. It's so annoying when usually people use intense and noisy music on their cooking videos. A soothing piano music on the background was a great choice you made! Bravo!

      There's a channel called cooking tree, and another called Peaciful Cousine, or something like that, cooking tree makes desserts (very aesthetic ones, i've inspired my work on her cakes a couple of times) and the second one is a bit more expanded, Amanda's Kitchen does have talking videos but the aesthetic of her dishes and her kitchen is really cool imo, they're more of a good mood happy video, the other ones are more relaxing. Chocolate House is another good option.

      YS J 치즈는 우유1kg 거의100g씩나와요 그리고 진짜 기계로 우유만들고 랜넷넣고 몇십시간씩 걸리는 노동력때문에 비싸기도하지요ㅠㅠ

      괜히 치즈가 비싼게 아니지
      우유에서 치즈로 제 2차 가공식품이니까
      그만큼 시간이 더들어가고 여러 공정을 거치니까 가격이 비싼거
      예를들어 돼지고기보다 가공한 햄이 더 비싼 이유도 여기에 있는거

      외국에 비해 우리나라 유제품이 대체로 비싸기도하죠ㅠ 우유가 금값
      보통 치즈는 전부 수입산이라 가격이 +되고

    I make mozzarella in Italy and even though it's a different procedure you had a nice results. It's not Korean product and it's not part of Korean culture, but you had a nice result for a homemade mozzarella. I know you burn your hands when you make. Great job.

    집에서 만드는 모짜렐라 치즈, 보통 정성이 아니면 만들기 어려울 것 같습니다. 렌넷이 응고제 역할을 하는군요.
    유청을 걸러주는 모습에서 정성이 더욱 느껴지네요.😁 뜨거운 치즈를 직접 손으로 치대시니 너무 뜨거우셨겠어요. 그야말로 치즈를 얻고 손을 잃으셨네요.😊
    먹음직스러운 치즈의 자태에 얼른 제 미각에 그 치즈를 얹어 놓고 싶군요.

    우유의 등전점인 pH4.6을 맞추기 위해 식초를 넣어주는거고 응유효소인 레닌(렌닌)을 넣어줘서 뭉치게해주는거군요! 모짜렐라 치즈는 다른 치즈들과 달리 원심분리를 하지 않고 만든다는 특징이 있어서 렌닌만 있으면 집에서도 만들 수 있어요>

    This is a simple cheese not mozzarella. Because is too hard when you cut a slice, the mozzarella must be soft when you cut it.
    The cheese that you make is not juicy like a real mozzarella. Here in Italy we say "when you cut it it has to make a drop of juice" but for a person whit out any experience is a VERY GOOD Resoult. Good job 🇮🇹

    With rennet it's a non veg cheese as rennet is an enzyme produced in animals stomach.Cheese can be prepared without rennet too.Just milk, vinegar and need to soak the cheese in the starch with added salt.Simple 🙂

    I have made mozzarella 4 to 5 times. And I failed all of that lol. It were not stick together, it were like breadcumb 😂😂 and my hands burned. I found that I can buy it in the supper market instead of trying burn my hands 😂😂
