      Actually it is called an Irish cake because of the use of Irish Whiskey in the recipe. However, you may soak the fruit in orange juice or non alcoholic grape wine. Please note that alcohol acts as a preservative in cakes so a cake made without it may not stay fresh for long.

      You can use fresh orange/apple/pineapple juice but in that case, don’t soak the fruit for more than 18-20 hours

      Thanks a lot Ruffina! Well, covering the tin adequately helps it from getting burnt as the baking duration is long

      I wrap in 3x foil plus 3x baking sheet. It prevents burning plus this method to stop the outer edge of cakes cooking first before the middle which causes the convexed top in cakes
