Hi Daisy thanks for trying it out ☺️ The temperature might be too high. Try turning off the temperature off when it starts to overflow and cook with the remaining heat. Let me know how it goes❤️

How does it come out of you don’t use heavy whipping cream? Sometimes when I make them the tart part looks like cooked flour with a little bit of milk lol I don’t know how to explain it, I’m trying to make it come out how they make them on Portugal 🇵🇹
Actually 4:45 I think you explained it the tart part dries up to much when I bake it but I’m not over cooking the mixture into a pudding when whisking it I make sure it stays pretty much a liquid

May i know if you have been using heavy cream when making them?

Why everytime I do this egg tart...it failed miserably...for example the tart burn black...the custard are still a liquid after 1 hour and I folded the tart dough just like you did but it doesn't have that crispness...please help ..I did everything following your step ..🥺😭😭
Hi Kittycat sorry to hear about your burnt egg tarts! I understand it is upsetting when it doesn't turn out the way you expect it to 😣. The tart might have burnt as it was too close to the heat, try placing the pan on the middle rack or one rack below the middle if you're already using the middle rack. If your oven has an option to choose 'fan bake' then I recommend you use that to make sure the custard actually cooks through. If it didn't turn out crispy, there are few possible reason for this, is it possible that you have added more water than needed? (Pls use 7tbsp and add 1/2 tbsp at a time if the dough is still dry). If you live in a hot country and the temperature in your kitchen is relatively warm, try leaving the pastry shells in the fridge before filling it in with the custard and make sure not to stretch the dough too much during rolling because you won't end up with a crispy shell. Can we use fresh cream instead of heavy cream?
Yes the fat content is just lower for fresh cream but for the purpose of cream in this recipe it should be ok 😊

Iv also tried to experiment with different temps, Iv tried really hot temps like 500°f for 10-15 min and and low temps like 300°f for 20-30min
I also just noticed your recipe calls for 2 egg yolks and the other one Iv been using calls for 6 wonder if that’s the issue
