Which month is suggested to do this? When did you cut the scions, how did you store it?

Ideally do the grafting just at or before bud break. You could see the early foliage first removed in the video so in this example the grafting was probably done three weeks after bud break depending on weather. Some growers prefer to have scion wood be a couple of weeks behind(still dormant) I’m guessing he harvested the scion earlier and kept the scion in refrigerator. Timing is important and so is technique.
My best recommendation is to graft a lot. I keep material to practice on. I try different times and different techniques on these practice trees. It also allows me to collect different genetics to keep on hand if I ever need that in the future. You can keep scion a few months in the fridge but for long term storage if you find interesting material is to graft a branch for the future.
As long as you tag and mark all the grafts you can build up quite a collection of cultivars on a single tree. A bit like fruit cocktail trees but for the purpose of storing genetic material.
      Happy grafting

Grüetzi . Darf ich Sie bitten, neue Videos aus Ihren Haselnussgärten zu zeigen?

So in theory you could graft with a scandi grind knife?
This is very informative, appreciate you sharing this with us
