But how does one say "I go walking". Ich gehe gehen? Or do we need to whip out spazieren for that one?

Good questions and you are right, it would be better here to say "Ich gehe spazieren".
"gehen" is normally not used to refer to the activity of going for a walk, a bit similar to English where "I go going" sounds strange.
