Some people love Balut, in Vietnam, it is a fav for beer drinker. It is usually served with Vietnamese tarragon and salt and pepper. You sprinkle a bit as you eat. The problem is you need to know how to pick the right egg. The bigger the egg the bigger the embryo. In Vietnamese, the egg literally means mistake duck egg. It means that there is a yolk and also whites, but the egg wont developed fully. I used to like it when I was younger, but I cant stand it now because seeing the bird whole body once terrified me. The yolk is yummy, but the white is quite hard to consume.
it actually has nothing to do with the size of the egg. The embryo gets bigger depending on the day it's cooked. For example, some people cook the egg of the duck as soon as it came out from the mother duck. So the embryo didnt form yet. But there are some who cook the egg after 21 days of coming out from the mother duck. So an embryo already formed. So a 14 day duck egg would have a smaller embryo than a 21 day duck egg would.

They're smaller, aren't tamable, have different tasting meat/preferences/needs than standard laying hens or slaughter hens. Sorry to get technical, I just know my chickens. Hahahaha. :~)

The industry standard for cornish hens in the grocery store come from juvenile cornish cross chickens. The industry standard for fryers, broilers and roasters are ALSO cornish cross chickens, but they've been allowed to grow to 6-8 weeks. I hope that helps.
