  • Ridge Gourd, also known as Turai or Tori in Urdu/Hindi and Beerakaya in Telugu, is a dark green, ridged vegetable with white pulp and seeds embedded in spongy flesh. It is a highly nutritious vegetable, rich in dietary fiber, vitamin C, riboflavin, zinc, thiamin, iron, and magnesium. Being low in fat and calories, it is considered an ideal food for weight loss. However, it's important to note that ridge gourd can sometimes turn out to be bitter. Therefore, it's recommended to do a taste test before using it in a dish to avoid any bitterness.
    One popular preparation using ridge gourd is Turai ki Chutney, a spicy and tangy chutney blended with spices that can be served with South Indian breakfast items like Idli, Dosa, Vada, Pesarattu, Uttapam, or with steamed rice and ghee. To make this chutney, ridge gourd is cooked until all the moisture is removed, then blended and garnished with a flavorful tadka. Due to its low moisture content, this chutney can be stored for weeks in a cool, dry place. Ridge gourd is also used in other dishes such as Turai moong dal, Turai and Gosht ka salan, and Turai Chana Dal.
    Ingredients:-
    Ridge gourd 700-800
    Tomato(fine chopped ) 2 pc big
    Onion (fine chopped ) 2 pc medium
    Green chilli 2
    Garlic 4 clove
    Fresh coriander
    Spices:-
    Red chilli powder 1/2 tsp
    Coriander powder 1/2 tsp
    Garam masala 1/4 tsp
    Tumeric powder 1/4 tsp
    Salt 1/2 tsp (as per taste)
    Cumin seeds 1/2 tsp
    Mustard oil 2-3 tsp
    Ghee 1 tsp
