- There are many ways to dispatch a lobster, but I prefer this way because it's quick and effective.

I always learned that after that initial stab, you're supposed to cleave down the lobster's face, splitting it in half. Are you saying that 2nd part is superfluous?
Splitting the face in half is good if you're making a bisque with the non-meat part. That way all the stuff inside brings flavor to your soup. That's why I was told to split the face in half.
Plus you won't miss the brain if your aim is closer to the eyes
I was taught the same way and now I'm questioning the need for the second cut
The full face cut is, I think, a way to make people feel a little better. Like, I DEFINITELY killed it. But all the stuff close to the eyes are just the mouth and sensory organs. I don't like to do the full cut because I don't want all that leakage and mess. Unless like that other guy said, you're making lobster stock.
@@mattpeacock5208 The most flavorful part of a lobster for a bisque or a sauce is the brain, It's like a little green gizzard in the head that makes bisque go from great to unbelievable! 🖖

I've seen a chef do the same sort of thing using a spike looking thing and a mallet. Same sort of effect.

I have been cooking lobster here in Maine all my life by steaming them, putting their head right in the boiling water in the bottom of the pot, BUT, I would like to do some grilling of lobster tails this summer on my new argentinian grill and the thought of tearing a lobster tail off a live lobster seems horribly wrong to me! So this is perfect. Thank you!!

Utah fish and game expect you to tear the heads off of live crawfish because you can’t take them live from the body of water you caught them in and not allowing you to clean them properly which is inhumane and culinarily gross.

no difference between this way and live cooking other than you aren’t being unnecessarily cruel by boiling it to death. the tissue hasn’t had anytime to start degrading which is why they’re cooked live traditionally. If i wouldn’t do it to a dog, i wouldn’t do it to any other animal
Uhmmmm... YOu stabbed it in the gut -- the stomach.. Not the brain. The brain is located in the throat between the eyes. You missed the brain by at least half an ince. So you hurt it but left the brain intact. If you think I'm wrong -- look up lobster anatomy.
In my Pacific Island culture, we just throw it in the boiling water (head first) alive.

And listen to them scream. At age over 35 I found out it was "inhumane". Tell that to animals in the wild. Imagine me telling my German Shepherd dispatch those rabbits humanely. I clean up remains every spring. Bottom line... get it done how it gets done.
