Sorption and desorption are the two phenomenon that involved in drying process. Sorption:- If the wet samples to be dried contain moisture less than EMC. Then solid absorb moisture from the hot air passed through it till it reaches the EMC. This is what happen in initial adjustment rate period (A'B). Due to the absorption of water from air, drying rate also decreases. AB line represent desorption phenomenon.Due to the loss of water drying rate increases.
