It’s a great one! It’s unfortunate because I actually just sold that one to a gent in Ireland just a few weeks ago! Was time to give her a new home. But I highly recommend them… if you’re looking for a lightweight, stainless clad gyuto, they are an amazing value. If you go on CKTG, find the knife and put your email address in the restock tab, Mark will send you an email when they get more of them. I’m pretty sure they had some 210s recently. (Though mine was a 240). Anyhow, hope you find one!
yeah man with low alloy steels like this, you can maintain them with nothing but a finishing stone. the geometry is what does the cutting. the steel used in these knives doesn't even have the abrasion resistance of any cheap dollar store stainless. the only real issue you can run into is chipping. but the good news is when it occurs, because they're so easy to grind it's quick to fix.

Is yu kurosaki the blacksmith for it? Ive got a fujin santoku i love but takeda my favorite smith yu probably close number 2

Yoshimi Kato Sa is the Smith for this knife.
