Is there an alternative to agar, agar? Xanthan, or Guar? UPDATE: I ran some experimental series yesterday. I trialed a recipe calling for a cup of juice a half cup of sugar and a half cup of cornstarch. Resulting in a passable gummy. Then because I couldn't find an answer online. I went experiment and using a large mug, a spoon, a measuring spoon and Guar and Xanthan gum as well as room temp water. I tested thickening action. While Xanthan created a suspension, it didn't create a gel. 2 tsp of Guar did create a gel. So I moved to a practical test. I used a cup of juice, two TBSP of homemade rich simple syrup, 2 tsp of guar. The gel was okay, but not firm enough. I'll run further experiments . I'm going to see if heat affects Xanthan
Great question!! Yes, you could use xantham, pectin powder or arrowroot in place of the agar agar. 2 tablespoons of arrowroot is equivalent to 1 tablespoon agar agar. Pectin is a 3:1 ratio and we would cut back on the maple syrup as pectin has natural sugar already in it. Xantham is also a 1:1 ratio swap. Let us know how it goes!

I simmered them for five minutes and they did not come out gritty. Nice and smooth.
