My british ancestor's favorite cheese, have some of that old Roman Road, Fosse Way culture from England. Believe Stilton cheese got popular in modern days from travelers. Bought a huge wheel from Amazon and froze in small bags to top burgers, salads. Salty unless use as condiment. 🍔🧀🍞🌱🐇

Thank you, I love this cheese and I want to make something like it, but in my country there is no penicillium. Is there an alternative? I saw in one of the videos they put a piece of blue cheese on the bread and left it rotting. Alternative to Penicillium Is this healthy or poisonous?
I am not sure on that.
I have bought penicillium off Amazon before, don't know if that is an option for you or not.
I have a question. I have my first blue cheese aging. It has developed soft spots that are a darker color, more a grayish green. I have seen this color in store bought cheeses but do not remember the cheese being softer where this color shows up. Do I need to cut these spots out and will they take over my entire cheese if I do not or worst case scenario, do I need to trash this cheese and start over ?
Something may not be quite right , all the ones I have made have been pretty hard on the outside, sometimes if the wrong bacteria get working it can throw things off

I have never not used cheese cloth
I would say it definitely helps hold everything together when removing from the mold
Do you control the humidity in the fridge/cave?
Not really
I do keep a pan of water in the fridge to try to keep the humidity up
