"Freshly ground black pepper" no jack a plastic container of ground black pepper isn't freshly ground.

Jack, does cilantro taste like soap to you? I could never figure out why salsa tasted like soap sometimes until I tried fresh cilantro once. It tasted like dawn dish soap.

I made the mistake of marinating fajita meat in pineapple over night one time and it completely disolved when I tried cooking it. Slight case of overkill. I would love for you to try using it on a tough cut of steak (skirt or round) and see what you think though.
Jack, how do you keep all that cheese from getting moldy? I'd love to buy large amounts of cheese, since it's cheaper that way, but it always gets moldy long before I can use it all. Do you have a vacuum sealer or something?
Why not put the pepper and paprika on after marinating? I feel like it would give the same amount, if not more of the spices' flavors, plus it's less wasteful.
@KamenBeyblader362 I am ambidextrous. I do all sports left handed and everything else right handed. After my minor stroke on Father's Day last year I lost some right side motor skills for awhile and depended on my left more than my right. I'm doing pretty good now, but that scared me.
Jack you should totally try buttering your tortillas on the side you put down in the pan the butter will help with the tortillas browning up and crisping.
I like to use leftover chicken for Quesadillas. We really like them with buttered pepper stir fry. It's a frozen mix of yellow, red, & green bell peppers and sliced onion. I agree with you on pepper jack cheese is the way to go. It makes it a little spicy but not so much your like OMG HOT! I have a George Foreman 360 Grill that has Quesadillas grill plates so that is how I cook our Quesadillas. We dip our Quesadillas in some mild salsa from a jar =)
had me at Quesadilla;lost me at chicken. I use chopped skirt steak basic Spanish season, and grill them with jalapenos. take the seeds and inner membrane out the jalapeno and cut it really thin. I don't worry about portion control, i get big tortillas put one in my grilling pan put american and blue cheese on the bottom and heat it up.. add my steak witch is till warm and put more american and blue cheese. then i put another tortilla on the top, flip it and cut it with a pizza cutter

Great video! I make steak Quesadillas pretty much everyweekend as our night time snack! But we have been doing a "Quesa Bar" at our super bowl parties, I cook up steak and chicken shredd it, put all the add ins, cheese, mushrroms, onions, peppers, and some sauces all out like buffet style, and have 2 burns going at the end, and the pans and do a self serve kinda thing! Everyone loves it! its a total hit at our house!

She does it all while showing how her mother and herself made food stretch to feed the family. Her son films the show... maybe it's her grandson, I forget. Anyway, she's on her last upload because she's nearing 100 yrs old. I'd check it out. She's old school Italian-American. I think u'd like her :)
