  • Chicken Fajita Tacos with Special Sauce
    Special Sauce Ingredients:
    • 1 cup mayonnaise
    • 1 cup ketchup
    • 2-3 tablespoons honey
    • 1-2 tablespoons mustard sauce
    • 1 tablespoon soy sauce
    • 1 tablespoon hot sauce
    • 1-2 tablespoons olive oil
    • 1/4 teaspoon oregano
    • 1/4 teaspoon garlic powder
    • 1 1/2 to 1 tablespoon salt (to taste)
    • 1/2 teaspoon white or black pepper
    • 1 teaspoon red chili flakes
    • 1 tablespoon chopped olives
    • 1-2 tablespoons chopped jalapeños
    Special Sauce Instructions:
    1. In a bowl, combine the mayonnaise, ketchup, honey, mustard sauce, soy sauce, hot sauce, and olive oil.
    2. Add oregano, garlic powder, salt, white or black pepper, and red chili flakes.
    3. Stir in the chopped olives and jalapeños.
    4. Mix well until all ingredients are thoroughly combined. Set aside.
    Filling Ingredients:
    • 2 tablespoons oil
    • 1 pound (approximately 500 grams) boneless chicken, cut into strips
    • 1-2 tablespoons red chili powder
    • 1-2 tablespoons garlic powder
    • 1 tablespoon red chili flakes
    • 1-2 tablespoons coriander powder (sabut dhaniya powder)
    • 4 tablespoons chicken powder
    • 1/2 tablespoon oregano
    • Salt to taste
    • 1 green capsicum, cut into strips
    • 1 onion, thinly sliced
    • 1-2 tomatoes, cut into strips
    • 1 tablespoon chopped olives
    • 1/2 cup mushrooms and mushroom water (1-2 tablespoons)
    Filling Instructions:
    1. Heat oil in a pan over medium heat.
    2. Add the chicken strips to the pan.
    3. Season with red chili powder, garlic powder, red chili flakes, coriander powder, chicken powder, oregano, and salt.
    4. Cook the chicken until it is fully cooked and tender.
    5. Add the capsicum, onions, and tomatoes to the cooked chicken.
    6. Add the chopped olives and mushrooms along with the mushroom water.
    7. Stir and cook for a few more minutes, ensuring the vegetables remain crisp and not soggy.
    Assembly:
    1. Take small tortillas and spread a layer of the special sauce on each one.
    2. Add a layer of fries.
    3. Place the chicken and vegetable mixture on top of the fries.
    4. Add another layer of the special sauce.
    5. Grate some cheese over the top.
    6. Heat the tacos in the microwave for 10-12 seconds until the cheese melts, or place them in a sandwich maker for a grilling effect and melted cheese.
