Most attacking midfielders happened to be the most technically gifted players on the field so eventually it devolved into the best player on the team wearing 10 but that isnt always true. 7, 9, 10, 11 are numbers for attacking positions so if you see any of those 4 numbers they are most likley and attacker with high technical ability (highlight reel players)

Historically no.10 is the ace but then came Eric Cantona at MU and made no.7 as the ace, I can't even remember who wore no.10 at MU during his time there. So no.7 traditionally for MU , the ace, Beckham, CR.

normally, the gol keeper is the number one, and the player's number goes up according to his function in team, generally the highest numbers are for the attackers, or midfielders (11,10,9...), and the defenders and full-backs have the lowest numbers (2 ,3, 4...).But there are some exceptions. there are players who play with numbers different from their functions, for personal reasons sometimes, because he likes the number or tradition. Sometimes there are also teams where a player does so much for the team with a certain number, that after his retirement the team retires that number, and no player can play with him anymore.
