On a side note, I got some wood pulp bannetons for Christmas after hearing you talk about them. All I can say is OMG - the difference they made in my loaves! Very informative video, especially for beginners. The only thing I might disagree with is when you said if you take discard out of the fridge you can just pour the hooch off (or give it to Jimmy) and continue on from there. I know the idea of hooch is off-putting. But never pour it off. First, it will alter the 100% hydration of your starter. And knowing exactly how much you have changed it is a little involved containing a number of steps. Second, much of the 'good' bacteria and the yeast live in that hooch. You'd be pouring them off as well. Always, always stir it in. Get past the off-putting and stir. Once you do you won't see it anymore, but your starter will not have suffered by getting rid of it.
I respect your opinion and you do make valid points. I did a major deep dive on this topic and compiled my findings and data on the sourdough community's opinion on stir it in vs pour it out. I decided based on my findings that I prefer to pour it out. But you are certainly not alone in your preference. Only take it out and feed it let it rise and then bake and then put it back in the fridge because I'm not sure if you could give me the name of the person that you said helped you with keeping it on the counter, that would be a blessing I'd appreciate it.
