if he doesnt use onion so what u can use if you like..thats why its called tribal maybe they dont have much access with that onion your saying..my hubby is from southern India also and he use lots of species and different kind maybe its because of personal preferences.
I would have done the whole thing in reverse, heat oil, fry all masalas to get the flavor out, then done all my stuff, putting oil at the end was meaningless, as its not heated, must be a TV show thats why
