Hi Alycia, Vann and Adam. 👋👋👋🐈 Oooooo...shrimpy cakes! Sigh... family memories. My mum would make these cakes for each New Year, along with her John Wayne (nicknamed for overly large bread slices that came in red and green) 1/4 sandwich crustless and other appetizers. My dad would be in his built-in bar, whipping up frozen daiquiri (the help had the night off... that was myself), margaritas, and genever gin n tonics. 😢 What I would give to have those times back. Memories will do, though. 🤗🐈
These look terrific and the macros are awesome. I used to buy Pork Panko from Baconheir. They sold it in 1 lb restaraunt bags, so it was worth the convenience. They don't offer that anymore, so once my supply is gone, I'm making my own. Love your recipes, and appreciate the savory ones too! Happy and safe New Year to you and yours.

I make a prawn and salmon fish cake very similar to your shrimp cakes. I also worked out a beef and veal croquette recipe. Using the crushed pork rinds as the flour roux and the breading.
Made these today...delicious. It forced me to make my own fermented mayo and tarter sauce, which turned out great. I cut the pork panko to 1 cup and used a scant tablespoon of bamboo fiber. I can see using a combo of shrimp and crab,with a bit of fresh dill.
Awesome! Definitely can use just about any "flour" combo to get the right consistency. Definitely could do that, I would just fold in lump crab meat after blending so you have some chunks of crab and it doesn't get stringy in there.
Sounds YUM! And my store has jumbo shrimp on sale. I have never understood sweetener in coleslaw dressing. I like it tangy, so I never have added sugar.

Could I make these with Oregon Bay shrimp?
You can use any shrimp you like. I just wouldn't use cooked shrimp because over cooking shrimp can get tough.

I may even experiment with a little keto chow Pina colada and unsweetened coconut for part of the pork rinds.
