- Lo Mai Gai | Steamed Glutinous Rice with Chicken
Lo Mai Gai is a classic Hong Kong dim sum that many people love. Many people think that making glutinous rice chicken is very complicated. In fact, it is not difficult at all to follow me, and there are almost zero failures. As long as the chicken and mushrooms are marinated and delicious, and the steamed glutinous rice is mixed with the mixed sauce, it can make a delicious glutinous rice chicken in a dim sum restaurant!
My portion here is 10 pieces of glutinous rice chicken. If you can't finish it, put it in the freezer, then take it out when you want to eat it, thaw it, steam it for 10 minutes, and you're ready to eat
Ingredients:
500g glutinous rice (soaked for 2 hours)
300g chicken breast
5 shiitake mushrooms (1 cut into 2 pieces)
1 chinese sausage (sliced and fried)
3 tbsp shallot oil/lard
glutinous rice Seasoning:
2 tbsp light soy sauce
2 tbsp oyster sauce
2 tbsp sugar
1 tsp salt
1 tbsp sesame oil
1 tsp dark soy sauce
1 teaspoon white pepper
3 tablespoons water, stir well, set aside
Marinade Seasoning: (Meat and Shiitake Mushrooms)
1 tbsp ginger juice
1 tablespoon light soy sauce
1 tbsp oyster sauce
1 teaspoon white sugar
a pinch of pepper
1 tablespoon cornflour
1 tsp sesame oil
1 tablespoon Huadiao wine
practice:
1. 500g glutinous rice and water (200ml) put it on a plate and steam for 25 minutes
After the rice is cooked, add 3 tablespoons of shallot oil and seasoning to mix well.
Prepare 10 small bowls, add the marinated ingredients, then fill the small bowls with rice, steam for 30 minutes, and you're done.

糯米雞是很多人喜愛的經典港式點心。很多人都觉做糯米鸡很复杂,其实跟着我这做法一点都不难,几乎零失败。只要鸡和冬菇腌制入味,而蒸好的糯米饭调入混合好的酱料混合一样可以做出点心茶楼好吃的糯米鸡!
我这里的分量是10粒糯米鸡。 如果吃不完的,就放在冰厨冷冻,然后要吃的时候就拿出来解冻后,蒸热10分钟就可以吃了!
材料:
500克 糯米(浸泡2小时)
300克 鸡胸肉
5朵香菇 (1朵切成2片)
1条香肠 (切片,煎香)
3汤匙 葱油/猪油
糯米饭调味料:
2 汤匙 生抽
2 汤匙 蚝油
2 汤匙 白糖
1茶匙 盐
1 汤匙 麻油
1茶匙 黑酱油
1茶匙 白胡椒粉
3汤匙 清水,搅拌均匀,备用
腌肉调味料:(肉和香菇)
1汤匙 姜汁
1汤匙 生抽
1汤匙 蚝油
1茶匙 白糖
少许 胡椒粉
1汤匙玉米粉
1茶匙 麻油
1汤匙 花雕酒
做法:
1.500克糯米加清水(200毫升)放在盘子里中火蒸25分钟
饭熟后加3汤匙葱头油和调味料一起拌均。
准备小碗10个,放入腌好的材料,再把米饭填满小碗,蒸30分钟。

请问一下,我有party需要做25kg 的糯米. 可以早一天把米蒸起来然后放腌料到明天早上再放入肉去蒸吗
你可以先把糯米加调味蒸熟,取出后,直接将肉放在底部,再铺糯米,好像我视频里的做法,然后一起收冰箱。隔天早上再蒸熟就可以了。
