There is no target man instruction. You can use false 9 instruction so that he drop down, but he wont run back forward like a target man, so need to manually tell him to run forward if you want
both have their own advantage. its a matter of preference. flexible will make your players play out of position which will open up spaces. maintain formation will stay at their position so its easier to pass the ball around because you know where they are. easy example is like using a cross specialist. no matter where you are during the build up, you can always pass the ball out wide to him because you know he will be there.
player's playing style need to suit the formation. ziyech (creative playmaker) can replace giroud if you want. pulisic is prolific winger. so, better to use him in different formation.
