I'd wager the remaining marinade is cooked in the same pan while chicken is resting with just a touch of cornstarch to make the gravy.

I'd never heard of chicken steak either, but I do recognize what they're eating as typical food like I had growing up in suburban Virginia--grilled chicken breast with a bit of sauce or glaze, and some veggies. We probably had something like that at least once or twice a week (usually with Rice-a-Roni or something like it, lol the 80s) and I still make it pretty often now.
We never called it chicken steak, just chicken, but the name makes sense--steak usually refers to beef, but it can be any thick piece of good-quality meat, like a tuna steak or a lamb steak. And a bit of googling turns up recipes for it from India and Pakistan that refer to it as an American dish. Which it is! They probably just added steak to the name because it sounds more American that way, like how they call chicken sandwiches chicken burgers.

I'm thinking it's a translation/language thing ... maybe the word "chicken breast" would be offensive to these people. I know there are words that mean something a little "extra" in other languages ... like the word "mouse" in Swedish is a euphemism for a part of the female anatomy as is "fanny" in the UK. So, 'chicken steak' it is!

The chicken steak looked tasty. I have bought similar at some supermarkets, though they often use frozen vegetables, making them mushy. Fresh steamed veggies are better.
How was this made? Was it a butterflied chicken breast?
For a similar-sounding dish, there is "chicken-fried" steak, which is a slice of beef pounded thin, then breaded & fried like chicken, and served with gravy and a biscuit. It is a way to use cheaper cuts of meat. The tribal folks could probably use goat, camel, or mutton, if those are cheaper than beef.

Yes, Sir, we've got that big version of a fork too, for lifting up straw, hay, dung etc. In parts of Germany (where I come from at least) it's even called "Forke", so that's another proof of some languages being so closely interrelated or having the same roots. Whereas the little thingy for eating is not even called fork in German but "Gabel".
Sincerely hoping that I could provide my part to successfully confuse you by this little bit of funfact ;-) I extend my best wishes to you - and to everybody else watching this channel regularly - for a very happy New Year. Peace and good health to you all!

We always called it chicken cutlet. Thin sliced breast dipped in eggs beaten with a fork, coated in flavored bread crumbs, fried to a golden brown. Never added a sauce but served with flavored rice and/or veggies. Glad these gentlemen had a taste of broccoli, one of those "love it or leave it" veggies. I so enjoy watching them experiencing new things and hearing their responses. They never fail to put a smile on my face. I pray for them daily.

It should be "Chicken Fried Steak". The dish presented to the villagers is totally incorrect and has nothing to do with the actual dish. I understand that there are dietary restrictions for these villagers, however, if the presenter is going to serve them an alternate food item, they need to explain why it is different and not the authentic dish. I find many inconsistencies in these food presentations and the villagers (rightfully so) either dislike the sish or do no have a full understanding of what and why they are eating.
