    Brad, as a guy who doesn't yet have his offset, I gotta tell you, I've really enjoyed this Weber Kettle series. Also, you just keep leveling up with these creations. In fact, yours has become without question, my favorite bbq channel on YT. You're an excellent teacher and a culinary artist that inspires others to get creative. Keep it up brother.

    Good video.... Been cooking this for years. I made a cooking plate that goes in my smoker. The smoke from it gives a great flavor.... We do birthday dinners for the birthday person. My son always ask for this one. We need chicken and shrimp.

    Always love a good beef fat tortilla sesh, and these look awesome! I love grilling up chicken for fajitas or tacos as a weekday dinner and now have to pick up a bottle of Chud rub to try it out! Still want to see a porchetta video!!!!

    Hey this may be a dumb question but how long to you let you charcoal go in the chimney before dumping it in the kettle?

      Let it go until the charcoal at the top is starting to catch and ash over. Usually about 10-15 minutes for a full chimney.

    Great video. I'll be fire'n up the grill with this soon. I was wondering if you should have put your slice paste under the skin instead of on top. My experience with skin on chicken is once the skin flavor is gone the rest doesn't have that blast of flavor like the skin. Let me know what you think.

      All animal fat is healthy. Nothing wrong with some beef tallow.

    As soon as those tortillas come off the presser, put some butter in them , and eat them . Reminds me of my childhood in the 80’s, when I’d come home from school . My mom would be making flour tortillas , I’d put butter on them and my mom would run me out of the kitchen , cause if not , I’d eat them all . LOL ! Rest In Peace MOM.

      Brings me fond memories of me and my dad doing the same, a quick late night snack. Throw a tortilla over the stove top for a minute or two with a small pat of butter. So damn good!
