Great job. I have done walleye sushi before. What you did wrong was you started the rolling with the edge with rice. U needed to start on the edge with no rice to hide thay seam. But i did the same on my first roll. What i also used as fillings were jalapeno, cream cheese, and cucumber. Was amazing. Keep up with the experimenting with using fish with other ethnic recipes.
Just so everyone’s aware there’s only like 2 kinds of worms/parasites in fresh water fish that can affect humans. Tapeworm is one and I forgot the name of the other. That’s why you cook the fish either way. I’ve eaten sunfish that looked like it was cover in pepper after filleting it. Found out what the parasite was cooked the fish a little extra and nothing happened to me. Btw that recipe looks delicious

Nice Idea! That did seem like a lot of worms. I probably would have thrown that out too. I always soak my fish fillets in salt water over night to kill or draw out any parasite's. I would think cooking would kill anything too. I did have a catfish last year after soaking all night the salt drawed out a worm that I couldn't see in the meat. First time I had seen that happen in 40 years lol. Yes, I did throw out that section of meat. 🙂

Pro tip. Keep your finger and tools a tad wet. If your fingers are wet, the rice does not stick to them, same with your knife, wipe, then wet it, after each pass

It's a nematode worm...very common in ct crappies....they do say you can cook them to 165 and it's supposed to kill them....but you had the right idea tossing those fillets! Better safe then sorry
If you fried the ones with the worms, it would probably be ok but I definitely would not try sushi with them. I most likely would have tossed it to though.
just pop the worms out. crappie get them when they move in to shallow warmer water. every single one i catch down here in MS have them…especially when they are in shallow water
Instead of cutting that slit to hold onto when you’re removing the filet from the skin, just poke a fork down in that same spot and it’ll hold it perfectly in place. But what would I know? I’ve only been running a charter business for 27 years lol
