For anyone about to use this recipe, I think she uses 1 cup of vegetable oil not 2! Just made this with my mom and it was abnormally oily and mushy :( but other than that it was yummy!

looks yummy. you should try The Joy of Baking Red Velvet's Cream Cheese Frosting recipe. it's more light and not too sweet and also its much easier to handle in frosting your cupcake. :) Try also Ermine Frosting. It's so stable.
