    Kaju Katli Recipe
    Ingredients:
    Cashew nuts (kaju): 2 cups (about 250 grams)
    Sugar: 1 cup (about 200 grams)
    Water: 1/4 cup
    Ghee (clarified butter): 2 tablespoons (for greasing and cooking)
    Cardamom powder: 1/2 teaspoon (optional)
    Silver leaf (varak): for decoration (optional)
    Instructions:
    Preparation of Cashew Nuts:
    Soak the cashew nuts in water for about 2-3 hours. This helps in grinding them smoothly.
    Drain the water and dry the cashews with a kitchen towel.
    Grinding Cashew Nuts:
    In a food processor or grinder, pulse the soaked cashews to a fine powder. Be careful not to over-grind, as it can turn into cashew butter. A few small pieces are fine.
    Making Sugar Syrup:
    In a pan, add sugar and water. Heat it on medium flame until the sugar dissolves completely.
    Continue cooking until the syrup reaches a one-string consistency. To check, dip a spoon into the syrup and pull it up; if a single thread forms, it’s ready.
    Combining Cashew and Sugar Syrup:
    Add the ground cashew powder to the sugar syrup and mix well.
    Cook on low flame, stirring continuously to avoid burning. The mixture will start to thicken and form a dough-like consistency.
    Shaping the Kaju Katli:
    Once the mixture starts to leave the sides of the pan, add ghee and cardamom powder (if using). Mix well.
    Transfer the mixture onto a greased plate or a clean surface. Allow it to cool for a few minutes until it’s comfortable to handle.
    Grease your hands with ghee and knead the dough for a minute or two until smooth.
    Rolling Out:
    Place the dough between two sheets of parchment paper or greased plastic wrap.
    Roll it out to about 1/4-inch thickness using a rolling pin.
    Cutting Kaju Katli:
    Allow the rolled dough to cool slightly, then cut it into diamond or square shapes using a sharp knife.
    If using silver leaf, place it on top of the Kaju Katli pieces.
    Serving:
    Let the Kaju Katli cool completely before serving. Store it in an airtight container for up to a week.
    Tips:
    Make sure to use fresh cashew nuts for the best flavor.
    The key to a good Kaju Katli is the sugar syrup's consistency, so be attentive while cooking it.
