How to Filet Flounder (Fluke)

  • In this video, we take our time walking you through the tools needed and the steps to filet a flounder, also called Fluke! This is truly one of our favorite fish and once you’ve done your own catch and cook you will realize that no flounder ordered at a restaurant even comes close to tasting this fresh!

    As a former Eastern Long Islander, fluke was my target fish for summer fishing. I caught many doormats in my days out there. The way I fileted fluke was to do the diagonal cut and slip the knife down the spine from there. You can feel with the tip of the knife the vertebrae. So run the whole knife down the center and make your cut to the edge of the fish. The same with the other side. This gives you two larger filets which I used to stuff with a nice crabmeat stuffing and a light coat of breadcrumbs to bake. 😊

      That is how it is done by those that filet for a living and the fish markets sell it 2 filets per fish.

    Dexter make very good knives, but they work so much better when they are sharp. You made hard work out of a simple task.

    Great work, that's how I also do it. You must be catching a lot of fish, that knife needs some sharpening.

    Fry it whole in two halves, delicious, to fillet it, loses flavour and a total waste.
