Great video. I use to do all my butts on the weber kettle using the snake method with the charcoal. I use whatever wood chunks I have on hand.

Also, love apple wood on pork! Where do you get your wood chunks from?

Thanks so much! Man it got hot a little earlier than it usually does. lol
They sell some wood chucks at Meijer. Also Academy Sports has a pretty big selection of wood chunks as well as the larger logs.
      Thanks again!

I was curious about the dome temps you were seeing with that charcoal setup. I think I use a lot more charcoal but probably don’t need to

With this setup, I set my gauge directly over the fire and it reads about 300 and I try to hold that. With that, I am usually around 250 degrees on the other side of the grill. I’ve checked that several times and it’s pretty accurate so far.
You and I live in the same area so I will say that my bottom vent stays 3/4 the way open to fully open throughout the cook and I will adjust the top vent accordingly to hold the temps I want. I will start at half open and adjust.

Okay I just watched it again and saw you added the wood a couple times so that leaves the question how often did you add charcoal?

In this set up, I was able to go about 2 hours before adding any charcoal and then it was just couple of chucks of charcoal just to keep the temps steady. Different brands of charcoal will vary the times some. As to the wood? I just watch the smoke. Larger chunks of wood will last longer than small pieces. When I stop seeing smoke, I just add some more. Good luck on that cook!

Good morning. I was wondering if I could ask a question or two? How often did you have to throw in more charcoal and did you only add the apple wood once? I'm going to make this tomorrow.

I’ve done it a few times the results were awesome. I only added charcoal like 4 or 5 times maybe and every other time I put a small piece of apple wood. You can control the temp pretty easily with the air vents so don’t worry about too many coals. I Would rather fiddle with the air vents vs adding charcoal 15 times
