Andrei, tell Mama Olga that when frying fish especially bangus/milkfish, she must fry with the side with skin at the bottom instead of the flesh. Marinade the fish while fresh, not frozen because the marinade will only be watery. You may marinade overnight by soaking the fish in the marinade (plenty of crushed garlic on vinegar, and salt) and putting it on the chiller. This way the flesh of the fish can😊 absorb the taste of the marinade.

The marinade should be more. I usually slice the milkfish/bangus into 4 pieces so that it will be a lot easier to fry. Marinating in an airtight container so that you can turn the container upside down so the top fish gets marinated as well. Fry the fish with the scales first before the topmost. if well fried the scales can also be eaten. Match with fried garlic rice. I hope Liza also helps mama Olga in the cooking. I suggest that you sprinkle a small amount of cornstarch or flour in the pan before putting the fish in the pan so as to prevent splashing of oil while frying, or better yet, roll the fish in flour or cornstarch before frying. You can also grilled bangus with tomatoes, onions and ginger inside the belly....wrapped bangus in banana leaf or if unavailable,wrap it in foil. dipping sauce is toyo with calamansi.
