    😊it will taste better if the bangus is marinated overnight. Dont remove the garlic when frying. The back side of the fish with scales must be fried first before the meat inside.

    When you marinate bangus there should be enough venigar and plenty of garlic and pepper so with the salt for 4 pieces of bangus.Marinate at least for a day so it's really delicious.No need for you to put calamansi.The best way to make a calamnsi sauce is to put soy sauce/patis and chilli.That sauce is good for grilled fish.

      They are always in a rush when cooking. I noticed.
      Most dishes in the Philippines taste better when the sauce, soup or marinade is allowed to cook and blend with the main ingredients.

    It is important to make sure that the oil is hot before frying! If the oil is not hot, the fish will absorb a lot of oil. I hope you will do the right thing next time.

    Marinating the bangus overnight will make it more tasty and flavorfull. It's nice for breakfast with sunny sideup egg and garlic fried rice🤤

      Matching toyo (soy sauce), calamansi, & siling labuyo mixed altogether as sauce. Dip small pieces of the fried bangus. Siling labuyo is crushed using fork to release its taste. Add small amount of vinegar if you wished. Or, atchara (grated papaya concoction) .

    You can also grill boneless bangus. Season the bangus with salt and pepper. Put chopped onions and tomatoes seasoned with a little soysauce inside. Wrap with banana leaves or aluminum foil. Grill over charcoal. Yummy. You can pair it with ensaladang talong (eggplant salad)

    Andrei...the marinated sauce should be poured into the dish pan...for the Bangus to be more tasty...After frying the bangus...sauce especially the garlic poured into the bangus...what we call " Bangus Steak"

    Mama Olga, it is best to fry and brown both sides. The head can be eaten when it is fried crispy. It has to be fried crispy. Great for dipping on spicy vinegar.

      FYI, it’s not the national fish, officially. The PI hasn’t designated a national fish. It’s a national symbol instead of a nationally declared fish

    Andrei, tell Mama Olga that when frying fish especially bangus/milkfish, she must fry with the side with skin at the bottom instead of the flesh. Marinade the fish while fresh, not frozen because the marinade will only be watery. You may marinade overnight by soaking the fish in the marinade (plenty of crushed garlic on vinegar, and salt) and putting it on the chiller. This way the flesh of the fish can😊 absorb the taste of the marinade.

    The marinade should be more. I usually slice the milkfish/bangus into 4 pieces so that it will be a lot easier to fry. Marinating in an airtight container so that you can turn the container upside down so the top fish gets marinated as well. Fry the fish with the scales first before the topmost. if well fried the scales can also be eaten. Match with fried garlic rice. I hope Liza also helps mama Olga in the cooking. I have noticed she does not help anymore. She should at least help in the food preparation.

    you should marinate it with vinegar, soy sauce, kalamansi . pepper, pinch of salt and lots of garlic! Fried bangus goes well with rice or fried rice...

    The bangus is better if fried crispier. And you should have poured all the marinade in the bangus to make it tastier.

    Good evening Andrei and family! Happy to see mama Olga trying bangus recipe. I suggest that you sprinkle a small amount of cornstarch or flour in the pan before putting the fish in the pan so as to prevent splashing of oil while frying, or better yet, roll the fish in flour or cornstarch before frying. Enjoy the fried bangus.

    You can also grilled bangus with tomatoes, onions and ginger inside the belly....wrapped bangus in banana leaf or if unavailable,wrap it in foil. dipping sauce is toyo with calamansi.

    Overnight marination gives you the best taste. You can dip it in calamansi and soy sauce OR fish sauce and vinegar . Hmmm yummy! 😊

    Better to fry too the bangus skin, when it is crispy it is delicious too, dipped it in spicy vinegar will chopped chili, onion add some sugar and ground pepper. Masarap!

    Looks great but it must have been marinated longer and it must be fully immersed in the marinade. Semi-deep fried also to make it evenly charred. My favorite!

    When you frying a fish make sure the pan is hot first before putting the cooking oil . Bangus should ne fry well , the standard is make the skin golden brown so you can eat all amd more crispier
