What was that legend title i saw when you were getting the shards from the bg store. Bug?

Yeah, when going from my main account to the alt, it keeps the profile picture / banner until it loads a new screen (like going to the crystals tab or going into a quest). Going from the home screen to the bgs store doesn't take me through a new screen, so it kept the pfp and banner.
I usually try and remember to get rid of it before recording anything, but that one got through lol.

The tags dictate which champions I can use. If a champion doesn't have a tag I have unlocked, I cannot use that champion.

For the most part, no, but it depends on the situation.
For a decent majority of the road to uncollected, I had no energy refills and just had to move node by node to progress. Getting the event quest bundles provided me with a few refills though, so I took advantage of those when I bought that.

Yeah, using emulators is against TOS. You will have to play it on a device which properly supports it.
