In Blender you can make the subdivisions lower in the preview for better performance but when it's rendered it can have more subdivisions/look higher poly. I like to imagine the same thing might be happening here

How many hours does it take to complete the animation of one scene on average ? It's very impressive ! I dont have a lot of notions so im always curious how these things work.
